A process for the preparation of sugar beet pectin involves roots washing, shredding thereof, mixing with water, utilization of sugars from beet pulp by anaerobic fermentation to methylated alcohol, hydrolysis-extraction of beet pulp, separation of hydrolyzed mass, filtration and concentration of pectin extract, precipitation and drying of pectin. After fermentation desugared beet pulp is washed with sulphite acid solution in ratio of pulp : solution as 1:(1-1.5) and pressed. The hydrolysis is carried out with mixture of acids (citric, ortho-phosphoric, chlorohydric ones) with hydromodule of pulp : hydrolitic factor as 1:(2-3), and filtered extract is clarified and concentrated by ultrafiltration. As a result pectin of beet pulp is prepared with high yield and increased quality which is determined by content of ferulic groups. |
