#CMT# #/CMT# Process for enriching an extract containing oleocanthal, comprises forming a bisulfite compound by mixing the extract with a bisulfite of alkaline or alkaline earth metal or quaternary ammonium and eliminating the derivatives that are not reacting with the bisulfite, and deprotecting the bisulfite compound. #CMT# : #/CMT# An independent claim is included for a process for extracting oleocanthal from virgin olive oil, comprising preparing an extract containing oleocanthal, and enriching the extract by implementing the above process. #CMT#USE : #/CMT# The process is useful for enriching an extract containing oleocanthal (claimed). #CMT#ADVANTAGE : #/CMT# The process is capable of economically enriching the extract containing oleocanthal with more than 90% of purity, and provides high content of oleocanthal (>= 30%). #CMT#INORGANIC CHEMISTRY : #/CMT# Preferred Components: The bisulfite is sodium bisulfite. #CMT#ORGANIC CHEMISTRY : #/CMT# Preferred Process: The process further comprises carrying out a step of selective precipitation of bisulfite compound of oleocanthal by solubilizing the compound in methanol and by a non-solvent. The deprotecting is carried out in an acidic medium and a basic medium, and in the presence of a silylating agent. The mixture of the extract with the bisulfite is prepared by solubilizing the extract in a bisulfite aqueous solution. The eliminating of derivatives not reacted with bisulfite is prepared by liquid/liquid extraction. The preparation of that extract comprises adding a hydrocarbon to olive oil, extracting water/alcohol or acetone binary solvents, or water/alcohol ternary solvents or water insoluble acetone/solvent using a mixture, and eliminating organic phase and total or partial concentration of the aqueous phase. Preferred Components: The non-solvent is ethyl ether. The silylating agent is the chlorotrimethylsilane. The extract containing of oleocanthal is in the form of oil. The bisulfite aqueous solution further comprises a solvent or a mixture of water soluble solvents. #CMT#EXAMPLE : #/CMT# Olive oil (10 kg) and cyclohexane (20 l) were charged in a reactor of 50 liters. Then 20 liters of a mixture of methanol/water (40/60 v/v) were added for liquid/liquid extraction and agitated at room temperature for 5 minutes. The extraction was repeated for second time under the same conditions. To the extract, first aqueous phase of cyclohexane (20 l) was added and maintained at room temperature for 5 minutes. Both aqueous phases were concentrated by evaporation (not exceeding 40[deg] C in the bath) to obtain the extract (4.7 g) of oleocanthal (12-25%). |
