摘要 A method for preparing coarse liquor and unrefined rice wine is provided to obtain a high quality liquor with functionality using pre-treated lotus root powder. A method for preparing a liquor from lotus root comprises the steps of: (a) selecting 2kg of domestic rice and washing it with tap water three times; (b) after putting the washed water in water at a temperature of 20 deg.C for 8 hours and removing water therefrom, steaming it to prepare cooked rice; (c) after mashing a ferment, fermenting it using 400g of cooked rice, 5g of malt, 7g of yeast and 600ml of water at a temperature of 26-28 deg.C for 24 hours for a first stage mash; (d) fermenting 1,600g of cooked rice, 50g of malt, 200g of treated lotus root powder, and 2,400ml of water at a temperature of 25-27 deg.C for 10 days for a second stage mash; (e) compressing the fermented material obtained from the step(d); and (f) putting the prepared material obtained from the step(e) in a bottle to prepare coarse liquor or adding 5 wt.% of a conventional koji material washed by a conventional unrefined rice wine preparing method to the prepared material and then putting it in a bottle to prepare unrefined rice wine.
