The proposed improved method for determining the total content of pigments in beef with the NOR, PSE or DFD quality indicator by photometry consists in determining, by a photometer, the optical density of the filtered solution produced by homogenizing the beef sample with acetone and concentrated chlorhydric acid. The reference total content of pigments is specified as 1.513+- 0.140 for beef with the NOR quality indicator, 0.961+- 0.094 for beef with the PSE quality indicator, and 2.118+- 0.322 for beef with the DFD quality.
