METHOD FOR PREPARING RED GINSENG CONCENTRATE CONVERTED BY ENZYME WITH INCREASING GINSENOSIDE RD

The present invention relates to a method for increasing the content of ginsenoside Rd in a red ginseng concentrate by using an enzyme conversion method. A method for preparing an enzyme-converted red ginseng product with an increased ginsenoside Rd content according to the present invention comprises: a step (S11) of adding a red ginseng concentrate in purified water to prepare a diluted solution; a step (S12) of heating the diluted solution to a temperature of 50 to 70 °C; a step (S13) of adding an enzyme to the heated diluted solution in an amount of 1 to 50% by weight based on the total weight of the diluted solution; a step (S14) of ripening the enzyme-added diluted solution at a temperature of 50 to 70 °C for 2 to 24 hours; and a step (S15) of inactivating the ripened diluted solution at a temperature of 90 to 99 °C for 30 minutes to 2 hours. A method for preparing an enzyme-converted red ginseng product with an increased ginsenoside Rd content according to the present invention is capable of more than doubling the ginsenoside Rd content in the red ginseng concentrate.
