<P>PROBLEM TO BE SOLVED: To provide a method for producingγ-aminobutyric acid, by which the production of the γ-aminobutyric acid can greatly be improved only by setting simple fermentation conditions on a method for fermenting Monascus anka. <P>SOLUTION: This method for producing theγ-aminobutyric acid, comprising injection of Monascus anka or Aspergillus oryzae into boiled rice and then culturing and fermenting the mixture is characterized by keeping temperature for the culturing and fermenting at 42 to 48°C. <P>COPYRIGHT: (C)2007,JPO&INPIT |
