发明名称 METHOD FOR STERILIZING FRUIT JUICE
摘要 <P>PROBLEM TO BE SOLVED: To provide a method for sterilizing tea beverage for improving safety and preservability of food through sterilizing microorganisms (mainly heat-resistant spore bearing bacteria) to cause a problem in a liquid food (fruit juice). <P>SOLUTION: This method for sterilizing the liquid food comprises sterilizing the liquid food having electrical conduction property using an electrification unit clipped with at least a pair of metallic electrodes. The electrification unit is a sealing system, and microorganisms are sterilized by continuously dipping liquid food subjected filtration treatment into the electrification unit impressed with voltage. The method enables to efficiently perform pressure alternating high electric field sterilization treatment without holding the electrification unit in a pressure container since the inside of the electrification unit is pressurized with the liquid pressure of the liquid food itself, and also enables to further efficiently perform sterilization treatment while controlling changes of color and ingredients (flavor component) of the fruit juice since filtration treatment is organically coupled. <P>COPYRIGHT: (C)2007,JPO&INPIT
