PROBLEM TO BE SOLVED: To provide a dish washer and a dish washing method, surely washing away stains such as oils and fats adhering to tableware by the final rinsing process even in the case of performing a rinsing process with water of normal temperature not heated. SOLUTION: In this dish washer, water which is mixed with a detergent is heated to a first target temperature and jetted to the dishes. Water supplied after the water in a washing vessel has been drained to the outside is jetted to the dishes one or two or more times. Water supplied after the water in the washing vessel has been drained to the outside is heated to a second target temperature higher than the first target temperature, and jetted to the dishes. Then, water supplied after the water in the washing vessel has been drained to the outside is heated to a third temperature higher than the first target temperature and jetted to the dishes.
