PROBLEM TO BE SOLVED: To provide a taste improving material containing lactic acid fermentation albumen, to provide a method for producing the taste improving material, and to provide a food composition, acid food composition or acid seasoning having taste improving action.

SOLUTION: This taste improving material contains lactic acid fermentation albumen. The food composition, acid food composition or acid seasoning having taste improving action contains lactic acid fermentation albumen. The method for producing the taste improving material comprises a process of adding lactic acid bacteria to albumen aqueous solution followed by fermenting.
