Emulsion (A) comprises an external fat phase (P1) and a gelled aqueous phase (P2), with P2 being 60-98% of total. The new features are that P2 contains a polyelectrolyte polymer (I) and P1 comprises one or more oils (II) and a lipophilic emulsifier system comprising one or more emulsifying surfactants (III). An independent claim is also included for preparation of (A).
