PURPOSE: A method of making abalone gruel(chonbok juk) is provided. The instant gruel is storable for a long period of time while maintaining characteristic taste, flavor and color of gruel without a loss of nutrients and allows anyone to cook within 1min. CONSTITUTION: The abalone gruel is prepared by the steps of: heating rice in water for 30min; separating rice from water with a mesh net; mixing 1kg dressed abalone with 10L water and then heating; immersing dehydrated gruel in the abalone extract; drying the abalone gruel in a cold air drier for 3 to 5hr; and then packaging the final product. The dressed abalone is obtained by stripping its intestine from the body and then adding salt to abalone fresh in a ratio of 7:3. |
