<P>PROBLEM TO BE SOLVED: To provide a method of producing dried bonito shavings, which produces the dried bonito shavings with high yield. <P>SOLUTION: In a device for producing the dried bonito shavings, a plurality of mounting dips 13 are formed in an abutting face 12 of a rotary plate 11 at circumferentially regular intervals, and intermittent blades 23 each having a first cutting edge 21 having a plurality of intermittent portions 22, and flat blades 32 each having a flat second cutting edge 31 are alternately mounted in the mounting dips 13.
