PURPOSE: Provided is a novel health food composition for preventing cancers containing the extract of Hericium erinaceum , as an active ingredient. The Hericium erinaceum extract inhibits the activity of COX-2 and iNOS to excellently prevent cancers and give anti-inflammatory effect. CONSTITUTION: A health food composition for preventing cancers and alleviating inflammation is characterized by containing an effective amount of the extract of Hericium erinaceum obtained by extraction through the steps of: drying Hericium erinaceum at room temperature in the shade and finely pulverizing it; inserting 3kg of the pulverized Hericium erinaceum in a 5L round flask and adding 3L of distilled water thereto, followed by double-boiling at 100 deg.C for 6 hours to extract active ingredients; filtering the extract with whatman filter paper; extracting the filtrate with distilled water two times, followed by filtration and freeze-drying.
