<P>PROBLEM TO BE SOLVED: To provide a method for processing ginkgo having such advantages that almost all of the husks of ginkgo are spontaneously cracked during processing, thereby the husks and nuts do not burst when undergoing heat cooking thereafter, and the quality of ginkgo as a frozen product containing flavor and hue seldom declines as well, and to provide the thus processed ginkgo. <P>SOLUTION: The method for processing ginkgo comprises the following practice: Air is extracted from the gaps between the husks and nuts( Fig.1(b)), water is then penetrated into the gaps( Fig.1(d)) and frozen( Fig.1(f)) to effect cracking the husks from inside by the help of the volume expansive force at the water freezing.
