摘要 PROBLEM TO BE SOLVED: To provide a self-digestion method for producing yeast essence which hardly gives influence to flavor of a food because of the thin color and yeast smell thereof, strengthens food palatability with sweetness and increases food deliciousness by being added to the food through making an essence extraction in high yield while preventing sundry germs from intrusion and reducing the addition of chemical substance. SOLUTION: This method for producing yeast essence comprises a self- digestion method as one of the methods therefor; wherein the self-digestion process is done under pressurization of 0.5-2 kg/cm<3> and a concentration process is done by a membrane concentration method with R.O. membrane and a sterilization process is done by a filtration sterilization method through membrane filtration.
