PURPOSE: A process of preparing a fruit jam by extracting fruit skin of Citrus unshiu and then concentrating is provided. Whereby, the jam is rich in the taste and flavor of citrus tangerina without off-taste and off-flavor and has a suitable consistency. CONSTITUTION: Fruit skin of Citrus unshiu is washed, cut and boiled at 100deg.C for 1hr. The dried material is washed three times, boiled at 100deg.C for 1hr, finely ground and then mixed with 70% by weight of sugar, 20% by weight of salt and 2L water, based on 1kg Citrus unshiu. Thereafter, the mixture is slightly heated in a kettle and concentrated. |
