PROBLEM TO BE SOLVED: To provide a method for efficiently producing nicotianamine from a water extract of soybeans. SOLUTION: An organic solvent such as ethanol is added to the water extract of the soybeans, and the resultant precipitate is purified to provide the nicotianamine. In other aspect, the organic solvent such as the ethanol is added to the water extract of the soybeans, and the resultant precipitate is collected as a roughly purified product of the nicotianamine. The roughly purified nicotianamine can be added to various kinds of food and drink to provide a healthy food.
