PROBLEM TO BE SOLVED: To provide a method for efficiently producing levan and enabling levan production efficiency to be further improved through combining the preculture step and/or cooling and aging step (comprising keeping the culture solution at pH 4.5-7 and at a low temperature of <=10 deg.C) for levan-productable bacteria. SOLUTION: This method for producing levan is characterized by comprising culturing levan-productive bacteria belonging to the genus Serratia (e.g. Serratia levanicum) in a sucrose-containing medium to produce the objective levan.
