PROBLEM TO BE SOLVED: To provide the subject apparatus for bulbous vegetables such as onions, achieving a root cutting performance with stable length without causing any slant cutting, thus affording good root-cut quality. SOLUTION: This root-cutting apparatus 1 mainly comprises a rotary blade side roller 17 set up above a rotary blade shaft 11, a rotary blade 18 set up on the upper surface of the roller 17, a stationary blade 21 for cutting a root M through slidingly contact with the rotary blade 18, a root feed roller 32 for guiding the root of an onion N to the sliding contact part between the rotary blade 18 and the stationary blade 21, and an onion conveyor belt 61 for conveying an onion N while gripping its stem. This apparatus works as follows: the rotary blade side roller 17 is set up under pressure contact with the root feed roller 32, an onion N undergoes a rotation by the aid of the rotary blade side roller 17 and the root M of the onion N is pulled into the pressure contact portion between these rollers 17 and 32 and then guided to the sliding contact portion between the rotary blade 18 and the stationary blade 21 and thereby undergoes a cutting treatment.
