Preparation of a hydrocolloid(s) powder composition with good dispersability in aqueous media, controllable hydration time and without formation of lumps comprises: (a) contacting high absorption powder support with a crosslinker under heating to give a potentially reactive crosslinking powder; (b) mixing with a hydrocolloid powder; (c) optionally treating with water (optionally containing salts); and (d) heat treating. Independent claims are also included for the potentially reactive crosslinking powder as an intermediate product and as the final composition.
