A heat exchanger for rapidly cooling a liquid includes a housing (10) for containing a cooling liquid (14), cooling conduits (16) traversing the housing in thermal contact with the cooling liquid and defining a cooling conduit inlet (18) and a cooling conduit outlet (20), and a vacuum pump (12) for reducing the pressure in said housing until the cooling liquid boils whereby a heat transfer coefficient of said cooling liquid is maximized. A condenser for condensing the vapors or the cooling liquid includes preheating conduits 30 traversing the housing and in thermal contact with the vapors of the cooling liquid. The preheating conduits define a preheating inlet 32 and a preheating outlet 34. Liquid food product such as milk is preheated through the conduits 30 from 4 degrees to 74 degrees, and then very rapidly heated in the electroheater 40 to 146 degrees Celsius. The milk is then very rapidly cooled to 76 degrees in 2 to 3 seconds through cooling conduits 16.
