PROBLEM TO BE SOLVED: To provide a device and a method for cutting a chunk of fresh meat equally so as to, for example, cut the uniformly cut chunk of fresh meat into a plurality of slices, causing less variation in weight and less cost, satisfying quality control and providing a high yield of the products. SOLUTION: A pressing means applies pressing force to the chunk of relatively tender fresh meat stuffed into a guide tube 11 having one open end at all times to shove the chunk of fresh meat from the open end, and a templating hole 15 formed in a molded plate 16 slidably disposed at one end of the guide tube 11 is filled with the tip of the chunk of fresh meat. The chunk of fresh meat is cut by a cutter blade 18 slidably disposed between the molded plate 16 and one end of the guide tube 11 so as to come into sliding contact with the molded plate 16. The molded plate 16 is thereafter brought to a second position, and the slice filled into the templating hole 15 is taken out by being extruded by an extruding means 20.
