PROBLEM TO BE SOLVED: To obtain an emulsified fat-and-oil composition for boiled rice capable of making the weight increase and chewability or the like of boiled rice compatible with each other through its addition to polished rice. SOLUTION: This oil-in-water emulsified fat-and-oil composition for boiled rice is obtained by including 5-60 wt.% of an edible fat and oil, 3.5-17.5 wt.% of a reducing starch syrup solid, 0.05-10 wt.% of an emulsifier, 0.05-1 wt.% of sodium caseinate and 11.5-91.4 wt.% of water. |
