PROBLEM TO BE SOLVED: To obtain a peptide for controlling rise in blood pressure by inhibiting an angiotensin converting I enzyme. SOLUTION: A Bacillus natto or a Bacillus subtilis in inoculated into a medium containing a rice bran, a soybean and a carbon source and fermented and cultured by aeration and agitation. A fermented and cultured solution is extracted to produce an angiotensin I converting enzyme inhibitory peptide. The peptide has <=2,000 molecular weight, preferably 600-1,300. An octapeptide having an amino acid sequence of Ile-Ser-Tyr-Val-Tyr-Val-Trp-Lys, etc. are contained as the peptide. Since the peptide is water-soluble, it can be added to a food and a beverage. The peptide has an angiotensin I converting enzyme inhibitory action even by treatment at 120 deg.C for 30 minutes in an autoclave. |
