PROBLEM TO BE SOLVED: To provide a method for maintaining raw tea leaves, enabling the optimal maintenance of the raw tea leaves, even when the natures of the raw tea leaves, their accumulation state, the environment of the raw tea leaf chamber, weather conditions, etc., are changed, by measuring temperatures and holding a preliminarily set target temperature by a specific method. SOLUTION: This method for maintaining raw tea leaves comprises measuring the temperature of the raw tea leaves 7 and then adjusting the air-blowing rate of an air blower for blowing the raw tea leaves with air through an air permeable floor surface 15 so as to maintain a preliminarily set target temperature. Also, the method for maintaining raw tea leaves comprises measuring the temperature of the raw tea leaves 7 and the wet bulb temperature of the outer air, adopting the measured outer air temperature as the optimal target temperature for maintaining the quality of the raw tea leaves 7, and adjusting the air-blowing rate of an air blowing means for blowing the raw tea leaves 7 with air through an air-permeable floor surface 15 so as to maintain the target temperature.
