PROBLEM TO BE SOLVED: To obtain a gelatin having both low color and high gel strength in a wide range of viscosity. SOLUTION: A gelatin comprises 0-25 wt.% high molecular weight fraction (>250,000); 0-20 wt.%βfraction (150,000-250,000); and 15-55 wt.%αfraction (50,000-150,000), and the gelatin has a gel strength of 200-400; an absorbance at 420 nm of 0.068>; and a protease concentration of >10 ppb.
