PROBLEM TO BE SOLVED: To provide a multistage flash evaporator used in desalting seawater and by which a specified part of a demister is not deteriorated, the waterdrop separating performance of the demister is maintained uniformly as a whole, and the quality of the produced water is kept high. SOLUTION: In the condensation part 3 of the housing 1 of a multistage flash evaporator, vapor straightening plates 20 are arranged vertically, longitudianlly and in parallel in the first half of a high-temp. evaporation stage 2a and the last half of a low-temp. evaporation stage 2b corresponding to the area where the upper part of a bundle 5 of condenser tubes is covered with cover members 11 and 12 below an upper demister 8 at the upper part of the respective stages to pass the vapor uniformly through the demister 8.
