The sorting and calibration table for prunes (2) comprises an adjustable inclined plane (3). It has a set (11) of parallel rollers formed by a fixed roller (12) and a movable roller (13) located in the slope direction and above the inclined plane. Channels (36) channel the fruit into the space between the rollers. A rod (21) and two connecting rods (19) enable translation of the movable roller in order to change the space between the rollers.
