PROBLEM TO BE SOLVED: To provide a high lysophosphatidylcholine content oil-and-fat composition which is effectively freed from the problem that it undergoes the precipitation, separation, etc., of the lyso compound when stored and has still better mold release and an improved flavor such as bitterness. SOLUTION: This composition is prepared by mixing a fat and oil with a lyso treatment agent having a total content of phosphatidylcholine and lysophosphatidylcholine of at least 50 wt.% based on the contained phospholipid and containing at least 30 wt.%, based on the total content, lysophosphatidylcholine and further adding a specified amount of a plyglycerol- condensed ricinoleic ester on an ethanol- or ethanol/polyglycerol-condensed ricinoleic ester thereto. |
