摘要 PROBLEM TO BE SOLVED: To obtain batter not causing cracking therein during freeze storage and free from attachment of water content sublimated from the inner food material to coat or direct transfer of water content in the inner food material to coat and provide a method for producing frozen food by using the batter and obtain the frozen food. SOLUTION: This batter contains low-melting point oil and fat having <=-20 deg.C melting point and grain flour or starch as main ingredients and the oil and fat is preferably soybean oil subjected to enzymatic transesterification. This method for producing frozen food comprises coating the inner food material with batter and further coating the coated material with bread crumb and frying and freezing the coated material. This frozen food is produced by the producing method.
