<p>PROBLEM TO BE SOLVED: To produce a refined Sake containing main components of saccharides composition of branched oligosaccharides and having increased taste and good body by using unpolished rice for brewing obtained from a method for spraying an aqueous vinegar solution, etc. in an ear of rice or raw unhulled rice state. SOLUTION: This refined Sake having improved quality of Sake and a smart taste is produced by using unpolished rice for brewing having slight cracked rice kernel and a low ineffective milled rice content (difference between true milled rice content and milled rice content) obtained from applying an aqueous vinegar solution obtained from performing an alcoholic fermentation and an acetic acid fermentation to branched oligosaccharide-containing saccharides by spraying, etc. in an ear of rice or raw unhulled rice state, as a raw material.</p> |
