摘要 Preparation (I) of bread product comprises: (a) liquefying an amylaceous raw material (II) in the presence of water and at least one carbohydrase; (b) adding (II) to water, vegetable oil, another amylaceous raw material (III) and lecithin to give an emulsion; (c) treating thermally; (d) drying to give a powder; and (e) mixing 3-10 parts by weight (ppw) of powder with 40-57 ppw wheat flour, 0-6 ppw sugar, 0-2 ppw salt, 0-3 ppw raising agent, 0-2 ppw emulsifier, 0-2 ppw alpha-amylase, 15-35 ppw water, 0-10 ppw fat, 0-3 ppw gluten and 0-4 ppw milk to give a homogeneous dough. Also claimed are bread products (IV) obtained using (I).
