<p>A steam peeler for potatoes, tomatoes, peaches, etc., consists of a pear-shaped pressure vessel with a filling chute and a dished bottom. It can be inclined and has a partial water bed at the bottom to cushion the impact during the filling operation. An overflow allows the displaced water to pass to a storage tank, attached to the bottom. When in the vertical position, an internal power cylinder closes the filler opening and steam is introduced through the pivot to peel the fruit. This makes the steam peeler suitable for more delicate fruit than potatoes without causing marks to the flesh of the fruit. The peeler tank volume can be smaller than with conventional steam peelers so that a pressure can be built up more quickly, again assisting the peeling of soft fruit.</p> |
