Grape test process and assembly takes and crushes series of samples

In a process to determine the quantity of concentrated juice extract that can be obtained from a batch of especially grapes, a sample of the grapes delivered is taken and crushed and the juice extract content is determined. The process comprises: (1) removing the fruit flesh from the skin prior to cutting and crushing; (2) taking test samples of the fruit from the batch at regular intervals, while the fruit is continually supplied to the main juice production process; (3) selecting the test samples as individual grapes at random by a pick-up device; (4) following each test, disposing of the residue to waste; (5) determining the juice content by refractometry. Also claimed is an assembly to select a sample for processing, and a measuring assembly to determine the juice extract content using a fast cutter-crusher.
