PROBLEM TO BE SOLVED: To obtain a confectionery with no feeling of yeast smell even if formulated with much yeast. SOLUTION: This confectionery is obtained by coating yeast on the surface of a granular food >=1mm in average granular size (e.g. baked confectionery, beans, sweets chocolate granules, silverberry granules) followed by further coating the surface of the resultant yeast coating layer with a material other than the yeast coating layer (e.g. baked confectionery, sugar, chocolate, edible fat-and-oil, shellac resin). This yeast-contg. confectionery, despite being rich in yeast, is free from any yeast smell and very easy to take, therefore can be eaten testily and conveniently. |
