摘要 PROBLEM TO BE SOLVED: To provide a raw garlic flavor oil capable of stably keeping a fresh flavor of the raw garlic under a cold storage or even at a normal temperature for a long period of time and to develop its producing method. SOLUTION: This raw garlic flavor oil is imparted of only non-heated flavor component of a raw garlic and has <=0.06wt.% of water content. The flavor oil is produced by adjusting water content to <=0.06wt.% by dewatering an edible oil and fat processed product under a reduced pressure of 7.5-50Torr, mixing the processed product with an edible oil having <=0.03wt.% water content or separating excess water by cooling a mixture of the mashed raw garlic with the edible oil and fat in a process of obtaining the edible oil and fat processed product by bringing the mashed raw garlic into contact with the edible oil and fat at 0 deg.C or a normal temperature and separating the residue.
