Removal of somatic cells from food or biological media involves subjecting the medium to at least one tangential microfiltration on a membrane having cut-off threshold at least 10 (pref. 10-50) microns and recovering the treated prod. as microfiltrate or permeate. Also claimed are products obtd. by the process, specifically milk contg. less than 10,000 SS per ml (and opt. also retaining at least 85% of its original content of fat globules or having a practically unmodified total initial flora); prods., esp. cheeses, obtd. by conversion of such milk are also claimed. |
