PURPOSE: To obtain flour for noodles useful for wheat vermicelli and Chinese noodles, containing fragrant rice flour, capable of providing noodles having texture rich in glutinousness, sweetness, taste, mildness, good balance and nice- smelling fragrance with sweetness free from offensive smell. CONSTITUTION: This flour for noodles contains preferably 1-10wt.% (based on the whole weight of grain flour in flour for noodles) of fragrant rice flour (preferably <=200μm particle size) such as HIERI or MIYAKAORI of Japanese native species. Noodles are preferably produced by using the flour for noodles. |
