1420909 Flavouring composition FIRMENIOH SA 30 Sept 1974 [28 Sept 1973] 42291/74 Headings A2B and A2C [Also in Divisions A5 and C3] A flavouring composition comprises at least one amino acid and/or at least one oligopeptide, together with a purine derivative of formula: wherein one of R<SP>1</SP> and R<SP>2</SP> represents a methyl group and the other hydrogen or a methyl group. The preferred purine derivative is theobromine oligopeptides may contain 2 - 6 amino acid units, dipeptides being preferred, not only the straight chain dipeptides but the cyclic ones (or diketopiperazines). Many are listed in the Specification. The composition may be used in amounts of 5-10 ppm based on the weight of the flavoured material, but more usually 50-500 ppm by weight are used. Other flavouring agents may be used additionally. The composition may be used to impart a bitter flavour to foodstuffs, beverages, animal feeds, pharmaceutical compositions and tobacco products. |
