PROCESS FOR PRODUCING XANTHAN USING NON-METABOLIZABLE ORGANIC ACIDS

A process for the activation of the production of xanthan, to give pseudoplastic characteristics to solutions and suspensions, through the growth of Xanthomonas bacteria genus in a solution of mineral salts and one or more carbohydrates, by adding linear or branched chained, saturated or unsaturated non-metabolizable organic acids (e.g. isobutyric acid, carob extract). This process results in improved yields up to 25 % higher, and a final product with fewer impurities.
