PURPOSE:In preparation of a KOJI, to prepare a rapidly-growing and high-quality KOJI having high enzyme preparation power in a short time, by adding a ground root part and/or leaf part of carrot, a squeezed solution of it, etc. during process of KOJI preparation. CONSTITUTION:Root part and/or leaf part of carrot is cut, or without cutting, fed to a grinder such as mixer, mill, etc. to give a ground material, squeezed solution, filtrate, powder or a treated material of it. It is properly added to a process of KOJI preparation. |
