<p>A fryer for continuous filtering of cooking oil during frying operations having a tank (12) with a bottom (24) and side walls (26, 28, 30, 32), an inlet port (14, 16) extending into the interior of the tank, an outlet port (18) adjacent a bottom of the tank, a pump (20) connected to the inlet port (14, 16) and to the outlet port (18) so as to draw cooking oil from the tank (12) and to pass the cooking oil to the inlet port (14, 16), heating elements (33) extending into the tank (12), and a filter plate (22) attached to the outlet port (18) adjacent to the bottom (24) of the tank (12) for removing particles from the cooking oil. The inlet port (14, 16) is positioned below the level of cooking oil in the tank. The filter plate (22) has a first mesh screen (114), a second mesh screen (116), and a layer of porous material (120) sandwiched between the mesh screens.</p> |
