PURPOSE:To obtain the title drink leaving flavor of characteristic adzuki bean, having a refreshing feeling and excellent flavor free from bitterness, astringency and a starch smell. CONSTITUTION:A drink having a dextrose equivalent adjusted to 5-20 by adding a saccharide (preferably sucrose) to the drink is inoculated with yeast (e.g. Saccharomyces cerevisiae) in an amount of 10<5> fungi/ml and fermented usually at 20-30 deg.C for 12-24 hours. When the fermentation is carried out until water content becomes 0.1-1wt.%, preferably a product having excellent flavor is obtained. |
