PURPOSE:To preserve sea urchin without causing deterioration of quality and preventing the flow phenomenon, getting moldy and generation of disagreeable smell by putting raw sea urchin or processed sea urchin in a vessel made of a material having a specific oxygen permeability and preserving the sea urchin in the vessel having an oxygen concentration controlled to a prescribed level. CONSTITUTION:Raw sea urchin or processed sea urchin is put into a vessel made of a material having an oxygen permeability of 1,000-8,000ml/m<2>/atm/24hr. The preferable material is e.g. single film or laminated film of polyethylene, polypropylene or polyvinyl chloride. The sea urchin is preserved in the vessel having an oxygen concentration controlled to 0.5-5vol%. The control of the oxygen concentration is preferably carried out by using a deoxidizer. The taste and flavor of the sea urchin can be maintained in addition to the prevention of oxidation by using a deoxidizer containing iron powder and at least one component selected from chloric acid salt, chlorous acid salt and hypochlorous acid salt. |
