PURPOSE:To can bamboo shoot simply without damaging a taste and to preserve, by steaming collected bamboo shoot with water vapor, cooling, washing bamboo shoot with bamboo sheath as it is with water, putting the bamboo shoot washed with water together with neutral water in a can, sterilizing by heating, sealing and keeping in cold storage. CONSTITUTION:Collected bamboo shoot of Phyllostachys pubescous Magel or Phyllostachys hambusoides Sieb. et ZuCcc. is put in a pot, steamed with water vapor, cooled, washed with water in a state of bamboo shoot with bamboo sheath or optionally the bamboo sheath is peeled and the bamboo shoot is washed with water, put together with neutral water in a can of 4.764 US gallons, heated at 100 deg.C for 1-1.5 hour and sealed. The can is stored in a refrigerator in the state as it is to carry out the objective preservation at 0-3 deg.C. |
