PURPOSE:To obtain a cacao-substitute fat resembling in the nature of natural cacao fat and useful for chocolate, etc., by carrying out ester interchange reaction between Chinese tallow, etc., and stearic acid, etc., using a specific lipase. CONSTITUTION:A raw material fat and oil is produced by mixing (A) Chinese tallow which is fat and oil separated from the mesocarp of the fruit of Sapium sebiferum (a plant grown in China) and/or its fractionated oil with (B) stearic acid (or its lower alcohol ester) (e.g., methyl stearate). The raw fat and oil is added with <=1wt,% of water and dissolved in petroleum ether, etc., to obtain a raw material liquid. The liquid is added with a lipase having specificity to the 1,3-sites of glyceride of mucor-type, etc., and is subjected to ester-interchange reaction at 20-80 deg.C. The obtained ester-interchanged oil is used as it is or, as necessary, compounded with other cacao-substitute oil to obtain the objective cacao-substitute oil. |
