A process for the preparation of protein-rich soya milk by means of blanching soya beans of any shape and their transfer to an aqueous alkaline solution containing sodium bicarbonate, wherein the mixture obtained is ground to a slurry. After subsequent degassing and heating a fine comminution of the soya bean particles contained in the slurry is carried out, in order to filter the slurry and, at a constant concentration of dry matter in the soya milk, to separate the slurry into soya milk and solids. |
