PURPOSE:To color a food into improved color tone of red-based dyestuff without using a synthetic dyestuff, by blending a raw material for cakes, soft drinks, etc. with a red-based dyestuff contained in the seed coat of red rice or a part containing the red-based dyestuff. CONSTITUTION:Grains of rice such as Oryzae sativa, Oryzae perennis, etc. having a red-based dyestuff layer in the seed coat are directly powdered and used, the seed coat part containing the red-based dyestuff is separated by a rice- cleaning machine and used as powder, or the red-based dyestuff is extracted from the seed coat part and used as a coloring matter. The coloring matter is blended with a raw material for cakes such as Mochigashi (bean-jam cake), Yokan (sweet jelly of beans), dried cake, etc., and soft drinks such as carbonated beverage, fruit drink, etc., to prepare colored cakes or soft drinks. The red- based dyestuff can be easily extracted by immersing the rice or the seed coat part in an alcohol, water, etc. |
