Yeast extract with a high proportion of 5'-GMP is obtained by heating an aqueous suspension of yeast cells of a yeast strain with a high RNA content to 80-120 deg. C, and treating with a 5'-phosphodiesterase (and opt. deaminase) to break down the RNA into nucleotides and give a yeast extract with 5'-GMP content above 7% by wt. The yeast strain is pref. Candida utilis CSB-6316 (FERM-BP 1657) or C.utilis CS-7529 (FERM-BP 1656); the former is claimed as new. The extraction is pref. at 40-50 deg. C and pH 8-12 and the content of 5'-GMP and 5'-IMP is normally in excess of 7% by wt. each. |
