A process for the prepn. of a soybean jelly comprises mixing 1.45- 1.5kg fine soybean powder, 20-25g antifoamer, 135-140g gelatine and 10-10.5 liter water, boiling the mixt. for 5-6min at 105 -120≦̸C, cooling the boiled mixt. to 90≦̸C, mixing with 40-45g thickening agent, casting the mixt. into a mould, letting the mixt. for 3-4min to solidify, cutting the soybean jelly in an appropriate size, and cooling with cold water of 5-6≦̸C for 30-60 min to provide final products.
